    Drop off your knives at the scheduled appointment time.

    If you are significantly delayed or need to cancel, please inform me at 263-379-4229.

    Each knife will be analyzed to determine the required service and to provide an estimate.

    Entrance is from Frontenac street, right before the Marie-Anne street intersection

    Sharpening turn-around times vary between same-day and 5 work days, depending on the volume of work I have, and/or the nature of the work that needs to be done.

    More time may be required for repairs. We can discuss this when you drop off your knives.

    - Once the work as been completed, your knives are inspected, cleaned, and individually packaged before they are returned to you.

    -  I will send an invoice by email, which can be paid online.

    -You will receive a pick-up notification via phone call or text message.

With over 15 years of sharpening experience, I operate using standards trusted by Michelin-level culinary environments and participants for the Bocus D’or international culinary competition. 

I assess edge wear, geometry, and steel type to determine whether your knife needs simple edge refinement or full performance reprofiling.

When shaping is required, I use a water-cooled stone system to correct geometry safely — preventing overheating and preserving the steel’s hardness.

The edge is then carefully refined and finished for:

  • Clean, consistent bevels

  • Long-lasting sharpness

  • Maximum cutting performance

My approach to sharpening is focused on proven working methods, precision, and performance.
