Sharpening is done by hand using Japanese water stones to give your knives an impeccable edge.

Regardless of the knife’s origin, it will be sharpened with care so you can enjoy the satisfaction of cutting your ingredients with ease.

I sharpen:

  • Japanese, European, and handcrafted kitchen knives

  • Single bevel knives (yanagiba, usuba, deba, etc.)

  • Takeda knives

  • Hunting knives

  • Pocket knives and folding knives

  • Bread knives (wide serrations)

  • Woodworking tools: straight chisels and hand plane blades.

  • Axes

I do not sharpen:

  • Steak knives with fine serrations

  • Scissors: for hairdressing and textiles

  • Medical instruments

  • Razor blades/straight razors

  • Machetes

  • Sabres/Swords/Medieval weaponry

Sharpening services include:

  • Minor corrections and adjustments to the cutting edge.

  • Light cleaning and conditioning of the handle with a mixture of mineral oil and beeswax.

  • Custom origami-style protective sleeve made from kraft paper.


Single Bevel Knife:

Sharpening includes the services below:

  • Light reshaping and/or maintenance of the primary bevel

  • Maintenance of the uraoshi (the thin flat rim on the backside of the knife)

  • Sharpening of the cutting edge (micro secondary bevel)
